Lemon roast potatoes


Delightfully zingy and a great accompaniment to your roast dinners

Serves 6

1.5.KG potatoes peeled and chopped into chunks

1 lemon juiced

2 tablespoons ground semolina

Low fat cooking spray

Preheat oven to gas mark 7, bring a pan of water to boil and add the potatoes and some salt. Simmer for 10 minutes.  Drain from pan and shake to roughen the edges. Spray with low fat cooking spray and sprinkle over semolina shaking to lightly coat the potatoes.

Roast in oven for 30 mins sprinkling over lemon juice half way through cooking time.
