Cous cous salad

Serves 8, adapted from Asda magazine June 2010

1 red onion chopped

low fat cooking spray

1 teaspoon ground coriander

1 teaspoon ground cumin

½ teaspoon ginger

2 tablespoons lemon juice

375ml boiling water

200g cous cous

150g dried apricots (chopped)

1 sweet pointed pepper (diced)

100g pistachios nuts (or sunflower seeds roughly chopped)

3 tablespoons flat leaf parsley

Cook onion in low fat cooking spray until soft, stir in spices and cook for 1 minute.  Add the cous cous, stir and remove from heat.

Add the apricots, pour on boiling water, over and leave to cool.

Place in a bowl and fluff up with a fork, add lemon juice, pepper nuts and parsley, stir well.
