Broad bean and rocket salad with bean butter


from asda magazine May 2010

2 x 400g butter beans (drained and rinsed)

4 teaspoons creamed horseradish

5 tablespoons olive oil

1 lime (zest and juice)

175g broad beans (fresh or frozen cooked and peeled)

2 tablespoons walnut oil

70g rocket

Lemon wedges

Whizz butter beans with horseradish olive oil lime zest and juice and 3 tablespoons warm water until smooth and creamy

Toss broad beans in walnut oil, add rocket and toss again

Pile the butter bean mix into a shallow serving dish and put the bean and rockets salad in large bowl, season well with black pepper and serve with lemon wedges and bread sticks
