French lentil soup with tarragon and thyme


From Veganomican I actually substituted the plum tomatoes with a tin of chopped tomatoes. I used precooked brown lentils and I also added a dash of balsamic whilst cooking.  This soup was sensational.  Very simple to make but very, very tasty. I also used 2 teaspoons of bouillon for the veg stock/ broth.

Low fat cooking spray

1 large onion (diced)

1 large carrot (Peeled and diced)

5 plum tomatoes (peeled and cut into dice)

4 cloves garlic (minced)

2 teaspoons tarragon

1 teaspoon thyme

1 teaspoon paprika

6 cups of veg stock (or water)

2 cups French lentils

2 bay leaves

1.5 teaspoon of salt

Ground black pepper

In a large soup pot fry the onion and carrots in the low fat cooking spray and sauté for about 10 minutes on a medium heat.

Add the garlic tarragon thyme and paprika and sauté for 2 more minutes add the tomatoes and a splash of water if necessary and stir to deglaze the pot, cover and cook for 5 minutes.

Add the lentils, water, bay leaves, salt and pepper.  Cover and bring to the boil.  Once soup is boiling lower heat to simmer and cook covered for about 45 minutes or until lentils are tender.  If soup looks to thin uncover and simmer for a couple more minutes.  If it looks to thick add a little more water.  Serve with crusty bread.
