My home made recipe of delight, I like to make the dough quite moist and sticky so they are good and fluffy.
1 cup self raising flour
3 heaped tablespoons of veggie marger, veg shortening or a mix of both (marg for flavour and colour, shortening for melty mouthy fluffyness)
¼ teaspoon salt
Good grind of black pepper
Throw the flour salt and pepper and the veggie margarine/ vegetable shortening into a blender. Blend for roughly 1 minute until it resembles breadcrumbs. (You can do the rubbing in by hand but I’m a lazy girl with a sore wrist)
Add a small amount of water tablespoon by tablespoon into the mix until it forms a sticky dough. Roll into walnut size pieces and pop on the top of your soup or stew. Bake covered for 15 minutes gas mark 6 and then uncovered for 15 minutes for a crispy top. Leave covered for the final 15minutes if you dont want the dumplings to have a crispy top
These can also be baked in the oven for the same time. If you do not cover them at all they will be quite crisp and biscuity.
Play round with the recipe adding herbs, spices, and “cheese” to fit in with your soups and stews. Replace the salt and pepper with sugar or fruit or spices for the topping for a cobbler.
