These are the devil they beg you to eat them!!

Feel free to add dairy free choc chips and orange zest

3 oz of silken tofu in a tetra package (1/4 of the pack of mori nu silken tofu) can be found in sainsburys or asda for £1  remainder of pack can be used for more cakes or as a sauce with garlic, pepper and spinach  for pasta this is very good for you

¼ cup milk (non dairy, soy rice etc)

½ cup sunflower or canola (rapeseed) oil

1 cup caster sugar

2 teaspoon vanilla extract

1 cup self raising flour

½ cup cocoa powder

1 tablespoon cornflour

½ teaspoon salt

Preheat oven to 325 or gas mark 3

Line an 8 inch tin with baking paper. It should cover bottom and sides.

Puree tofu non dairy milk and oil in a blender until smooth and a little fluffy.  Use a spatula to scrape it down the sides to incorporate everything

Transfer tofu mixture into a bowl and use a whisk or fork to vigorously mix in sugar and vanilla

Sift in flour, cocoa powder, cornflour, and salt.  Use a spatula to fold and mix until smooth.

Transfer to baking pan and smooth out the top. Its ok if the batter doesn’t sink into edges as it will expand during baking. Bake for 30-32 mins remove from oven and let cool for at least 15 min before slicing before serving. Or leave whole for a cake

You can add nuts choc chips, orange coconut etc whatever you want
